Garlic-Ginger Bok Choy

  • 1 T Olive oil
  • 1 Head of fresh bok choy
  • I/2 Bunch garlic scapes (chopped)
  • 1 T Fresh Ginger (minced)
  • 1 T Soy sauce
  • Optional–red pepper flakes to taste.

Wash bok choy and remove each stalk from the core before cutting them in half lengthwise.

Heat the oil in a large skillet over medium heat and add your chopped garlic scapes as well as your ginger and stir continuously for 45 seconds.

Add your bok choy and soy sauce and stir until evenly coated with spices. Saute for 3-4 minutes or until stalks are crisp and tender.

Serve hot.

Baked Radish Chips

  • Oil of choice
  • Radishes
  • Salt & pepper to taste

Preheat oven to 375 degrees. Slice radishes into very thin chips and spread on a greased cookie sheet. Lightly coat with cooking oil of choice and then sprinkle with salt and pepper or other desired spices. Bake for 10 minutes, flip and bake for another 5-10 minutes or until crisp. Time will vary depending on the thickness of your slices so keep an eye on them after the rotation.
