Garlic Roasted Summer Potatoes

  • 1 lb Farm fresh potatoes (cut in half)
  • 2 Cloves of garlic (minced)
  •  Olive oil
  • Salt & Pepper to taste

Adjust oven rack to lowest position and heat oven to 450 degrees. Toss potatoes with oil and other desired spices. Arrange, cut side down, on a large lipped cookie sheet. Roast until tender and golden brown (about 30 minutes). 

Serve hot.

Easy Zucchini Pasta

  • 1 Zucchini
  • 1/2 t Salt
  • Sauce of choice

Take a box cheese grater and place it on its side with the largest grating holes on it face up.Cut the ends off the zucchini, then push along the top of grater, in long strokes in order to create long, thin ribbons of zucchini. Alternatively you can also hand slice it into thin ribbons.

Toss in salt and zucchini together in a bowl and let stand for 5 minutes or until slightly tender.

Season with  pesto or homemade spaghetti sauce and parmesan.
