Easy Caprese Salad

  • 3-4 Farm fresh tomatoes (cut into ¼-inch thick slices)
  • 1 Pound fresh mozzarella (cut into ¼-inch thick slices)
  • 1 Bunch of fresh basil
  • Oil of choice (olive recommended)
  • Balsamic vinegar
  • Salt & pepper to taste

In a glass pan or serving bowl layer alternating slices of tomatoes, cheese and basil leaves. Then drizzle the salad with your oil as well as the balsamic and salt.

Kale Chips

  • 1 Bunch farm fresh kale
  • Oil of choice (olive recommended)
  • Spices of choice

Remove the kale leaves from their thick stems and tear them into bite size pieces before drizzling with oil and spices. Spread onto a baking tray and bake at 350 for about 10-15 minutes or until the edges brown but are not burnt.
